The 4th (and a Print Shop Sale!)

Happy birthday, America! To celebrate, we’ll be eyeballs deep in drywall dust – literally, since you’ll find us on a ladder, hammering away at the ceiling of our new home. The rest of this week and weekend will be spent in our finest painting clothes, and as soon as we pick up the old trash and previous-owner-doggie-presents from the yard, Jack’ll be chasing his own tail on our grass!

And as our special little thank you for the big guy (after all, he’s been awfully patient while we run errands and make trips to the house), we whipped up some pet friendly pupcakes. Not surprisingly, they were a huge hit – since table food is a general no-no around here.

INGREDIENTS
1 egg
1/4 cup peanut butter
1/4 cup vegetable oil
1 tsp. vanilla extract
a big squeeze of honey (optional)
1 cup shredded carrots
1 cup flour
1 tsp. baking soda
nonfat plain yogurt

STEPS
Mix egg, peanut butter, oil, vanilla and honey (using a spoon is a-okay!). Stir in the carrots, then sift in your flour and baking soda. Your mixture will be thick; this is good. Spoon batter into paper lined muffin cups, filling each about 2/3 full. Bake for 25-30 minutes at 350 degrees. Once they’ve cooled completely, use nonfat plain yogurt for icing! Makes 6 pupcakes.
